[su_box title="Egg Muffin Recipe"]Ingredients in The Egg Muffins • 4 eggs • ½ cup egg whites • 4 tablespoons almond milk • 1 teaspoon baking powder • 2 teaspoons garlic powder • 1 scoop desiccated liver powder • ½ teaspoon red pepper flakes • 1 red bell pepper, diced • 2 green onions, diced • ½ overflowing cup mozzarella cheese, divided leaving two tablespoons for topping.
How to Make the Muffins
Preheat the oven to 300 degrees.
Prep and portion all the ingredients.
In a large bowl, place the eggs, egg whites and almond milk. Whisk until broken. Add in the baking powder, garlic powder, liver powder and red pepper flakes.
Whisk to combine.
Stir in the bell pepper, green onions and bulk of the mozzarella cheese.
Line a muffin tray with silicone cups and portion the egg mixture. Because the peppers fall to the bottom of the bowl make sure there is an even mixture in all the cups.
Top each muffin cup with a teeny bit of cheese.
Place in the oven for 16 minutes. Rotate the pan and bake for another 14-16 minutes, checking frequently the last three minutes. Turn the oven off and let sit for ten to fifteen more minutes.
